Start Indoors
Microgreens and Sprouts
Keep growing microgreens and sprouting seeds indoors for a constant supply of fresh greens. They're quick to mature and can be grown on a windowsill or under a grow light.
Herbs
Many herbs like basil, parsley, and chives can be grown indoors over the winter. Start them from seed and keep them on a sunny windowsill.

In very mild climates, you might still be able to sow some cool-season vegetables like spinach, kale, and radishes, though growth will be slow.

If the ground hasn't frozen yet, and you have bare soil, consider sowing a cover crop like winter rye. It will protect your soil over the winter and can be turned under in the spring to add nutrients.
